Here's the recipe I used when I make banana bread. It's absolutely delicious!

Banana Bread

INGREDIENTS:

- 2 cups unbleached all-purpose flour
- 3/4 to 1 cup white and/or brown sugar (depending on how sweet you want it)
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon, more or less to taste
- 1/2 teaspoon nutmeg, more or less to taste

- 4 very ripe bananas, mashed well (about 2 cups mashed)
- 1/4 to 1/3 cup vanilla yogurt (depending on how moist you want it)
- 2 large eggs, lightly beaten
- 6 tablespoons unsalted butter, melted and cooled slightly
- 1 teaspoon vanilla extract

- 3/4 cup coarsely chopped walnuts (I recommend lightly toasting them!)

DIRECTIONS:

1. Preheat oven to 350°F. Lightly grease a loaf pan with butter or non-stick spray.

2. In a large bowl, mix all dry ingredients together and set aside.

3. In a medium bowl, mix the mashed bananas, yogurt, eggs, butter, and vanilla extract.

4. Fold the banana mixture into the bowl of dry ingredients until just combined. Fold in the walnuts and pour batter into prepared loaf pan.

5. Bake for 55 to 58 minutes, or until tester comes out clean.

6. Place the pan on a wire rack and let it cool for 10 minutes before turning the bread out of the pan.

Here is the recipe I make. It's the one my mom always made when I was a kid

2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup butter (1 stick)
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1/2 cup sour cream
1 cup mashed ripe banana
1 teaspoon vanilla
(1/2 cup toasted nuts, optional)

1. Grease a loaf pan, preheat oven to 350 F
2. Combine flour, soda, powder, salt, and cinnamon. Set aside.
3. Cream butter and sugar. Beat in eggs one at a time.
4. Beat in sour cream, bananas, and vanilla.
5. Stir banana mixture into flour mixture until just moistened.
6. Bake 55-60 minutes or until done.

This is the one I use and I am NOT a baker by any means!!! lol It's VERY simple.... I've sent it to family members for the holidays and it travels really well and makes about 3-4 little loaves too...

Ingredients

* 3 1/2 cups flour
* 3 cups sugar
* 1 1/2 teaspoons baking soda
* 1 1/2 teaspoons salt
* 1 teaspoon baking powder
* 1 teaspoon cinnamon
* 1 teaspoon vanilla
* 4 eggs
* 2/3 cup water
* 1 cup vegetable oil
* 2 cups bananas, mashed
* 1 cup pecans, chopped

Directions

1. Preheat oven to 350 degrees.
2. Combine ingredients in large mixing bowl.
3. Pour batter into 2 prepared bread pans or 1 prepared bundt pan.
4. Bake for 1 hour or until firm and golden brown.
5. Cool on wire rack for at least 15 minutes before turning bread out onto tray.
