Not to be a pessimist...
This is the second or third time this occurred. I start doing the quest, I finish 3 and then it resets to 1 quest done.

Did you do them around 12:00 am - 12:10 am? It tends to reset during that time. It's just safer to wait 15 mins or so.

Ah I see. Yes, it tends to reset any quests you do up until 12:10 am ish. I had the same problem so I just waited 20 mins or so after the winners were announced for the previous day to begin the new quests. If you do that, it shouldn't reset on you anymore.
