chicken legs coated with vegetable oil, black pepper, garlic salt with parsley and some lemon pepper cooked in the oven does this sound good toyou?Do you think a side of mashed potatoes would go good with the chicken?

I think I've had something similar before, and yes I really enjoyed it! I always enjoy using lemon pepper/garlic in my cooking. Mashed potatoes would do nicely, but if you want something with more flavour you could just cook up some simple rice and melt in a little butter/chicken stock and throw in some vegetables. I love peas & carrots & corn in my rice! Or my taters.

Darn, now you've totally got me all wanting this meal.

@moon12216 - In vegetable oil ? God, no. Try some corn meal, rosemary, parsley, lemon pepper (Don't go overboard w/ the black pepper unless you like that thing) and leave off the garlic, it doesn't mix well w/ lemon. You can also do rosemary, sage, oregano and dill in the corn meal to make a nice breading. Simply roll the chicken parts in the corn meal mix, place in pan and bake until done. If you must use some liquid, make it egg. Egg mixed with the spices and brushed on at various times throughout the cooking leaves a nice crunchy skin and soft juicy meat inside.

Mashed potatoes go good with everything Try yellow potatoes, so good. Also try adding in parsley and chives to your potatoes, not so much parsley, though, and use milk & butter or milk & ranch dressing for a yummy taste.

@moon12216 - I live on a budget too, and some things do come in handy more than once. Corn meal is an excellent breading to have on hand for chicken and pork, breaded chops, yummy. Just because it's cheap now doesn't mean it's good for you. Vegetable oil is terrible. If you MUST get a jar of coconut oil, there's a good brand at walmart called Lou Ana that is much better for you, fairly reasonable priced, and one of the most versatile purchases you can imagine. Coconut oil is good for frying, baking, cooking, using to make popcorn, AND it's a wonderful skin cream, it helps skin heal from cuts and scrapes as well as keep the face clean (My sister occasionally uses it on her face before a shower.)

You can buy in bulk as well, I buy spices I am not growing from an online herb and tea shop. You can ea well and eat healthy if you learn the tips and tricks and realize that cheaper is cheap for a reason, and is poisoning your body. What a friend of mine does is has the same meal for breakfast, oatmeal every day, that way he can save his variety in eating for lunch and supper, giving him more flexibility w/ his funds. Living on a budget doesn't HAVE to mean eating crap food, it just takes some ingenuity.

Here's a tip: don't buy spices at Wal-Mart. You can get the same thing, in larger quantity, for less, at the dollar store. I buy most of my spices, including salt and pepper, cinnamon, lemon pepper, etc. at the dollar store. Your local dollar store has way more in it than people realize.

@moon12216 - ahh haha you sound like me, I live an hour away from anything like that and I don't drive. And our local grocery store is kinda pricey Not way atrocious, but, well.... so yes i have had to learn how to shop and live on a budget, and you know, if you're careful and learn, you can eat pretty good. We don't buy soda except for a few times a year, chips, too, and rarely candy. I do have a stash of m&ms in a jar, they were on sale and we use them for ice cream topping. I also sometimes make homebaked goodies, so it's not like we're starving for yummies

It's good the people liked it, though, I guess that's fine, but, if you ever do get out of town, take a look at what you can find, you never know

A caveat re. dollar sore spices, they can be a lot less flavorful than buying in bulk or growing your own, so you may use more, but you'll spend less. it's a toss up.

Food threads will be the death of me XD

*munching on cherries as I type* The meal sounds amazing, and mashed potatoes would definitely go well with the chicken. Great preparation technique of the chicken btw!
