My mom started calling me Lainie Painie when i was a little girl. I always have been dramatic. I had asthma at a young age and almost died on my Mom and Dad two times. So I grew up very spoiled. My mom is long gone now but her spirit remains with me always. I miss her so much that I hurt inside. This pet is my pet with my nickname my Mom use to call me. I think back to some of our favorite recipes we use to make together. The recipe I am about to share is one of the families favorites. :
Chicken Spaghetti
2 to 4 Boneless Chicken breast boiled (cut up into pieces and 2 cups of broth reserved.)
1 Box of Thin Spaghetti cooked almost done (will cook done in the oven)
1 Can Cream of Mushroom Soup
1 Can Tomato Soup
In a small sauce pan saute:
1 bell pepper cut into large pieces
1 onion cut into large pieces
in a pan with
½ Stick margarine
Add 1 Jar pimento
((or roasted red bell pepper) I use the roasted bell pepper because 1 jar usually does two meals of this. Save the other half for another batch later…))
(I then put all pepper/onion mixture in a blender and blend it till it's chunky but it helps bring out the flavor doing this)
Mix all the above ingredients (Chicken, spag, soups, and pepper mixture) and add 2 Tablespoons of Chili powder (We prefer Klass Brand) and mix well…pour into a casserole dish or keep in the large stock pot.
Then on top of the Spaghetti mixture put 1 Bag of Shredded Mexican style Cheese....
Bake at 350 degrees for 30 minutes or until the top of it is all bubbly.
