The word "chocolate" is traced back to the Aztec word "xocoatl," and the name for the cacao plant, Theobroma cacao, means "food of the gods."1 The Olmecs were the first to use the plant for a drinking chocolate some 4,000 years ago. Over the centuries it was adopted by the Mayans and then later the Aztec. It was predominantly a bitter drink with water and additives such as corn, chilies, honey, vanilla, and agave syrup. However it became so highly prized that it was used as currency!
When the Spanish invaded the South Americas, they took chocolate and cacao back to Spain, where it was a closely guarded secret for many years until a young Spanish princess was married to the French king Louis XIV, and soon chocolate was making its way into many European countries. It was the first caffeine to hit Europe, well before coffee or tea. In 1828 a Dutch chemist, Johannes Van Houten developed a process that created cocoa butter. In 1847 Fry & Sons of Bristol, England, used the butter to combine with cocoa powder and sugar to create the worlds first chocolate bar. In 1875 a Swiss manufacturer, Daniel Peters added milk powder for the first milk chocolate.
Since then, chocolate has become a multi million dollar industry with approximately 7.3 million metric tonnes consumed annually.
