Ingredients:
Tahini, Moscovado Sugar, Buckwheat Flour, Chopped Chocolate, Vanilla Extract, Cinnamon Powder, Flakey Salt, Barista Oat Milk.
Recipe:
Combine equal parts tahini, moscovado sugar and buckwheat flour. Add as much chopped chocolate as your heart desires, a splash of vanilla extract, a dash of cinnamon powder, a BIG few pinches of salt, and mix to combine.
If it's still too dense to cookie dough properly, add little barista oat milk (teaspoon at a time) to bring it all together.
The resulting mixture should be firm and pliable, but kinda crumbly when broken apart and it should look and taste like chocolate chip cookie dough. Like really fucking good chocolate chip cookie dough.
It is edible immediately, but for the best flavour it needs to rest a bit. I like to fill freezer bags with the dough, compress it flat and portion it into little squares to freeze for whenever I remember I have cookie dough in the freezer. No need to defrost these before eating btw, and freezing thickens up all the sugars and fats and makes the cookies deliciously chewy.
This cookie dough can absolutely be baked too if that'smore your thing, they get super crumbly and caramelized and full of streaks and pools of melted chocolate after about 10 minutes in a hot oven.
Pro Tip: Use as a topping for roast bananas for an amazing dessert.
