Cheese

Cheese is awesome and amazing. It's been around for at least 7,000 years, and developed somewhere between Asia and the Sahara. It was likely an accidental find as they may have stored milk in cow or sheep stomachs, and the rennet in there would have encouraged curdling. Cheese is a better way to keep milk for a longer time, especially in hot areas.

Suffice to say, humans and Subetans have been enjoying cheese for thousands of years. There are many types of cheese now that can cater to any palate. From Aarewasser to Zwitser, different types of cheese are now found across the globe on every continent. While it is generally agreed that cheese falls into several categories, there is several different lists of them from 5 to 10 types. The most common different categories are:

- Firm ~ e.g. Harzer, Handkäse, Gammelost
- Hard ~ e.g. Gouda, Cheddar, Parmesan
- Fresh Soft ~ e.g. Mascarpone, Fromage Frais, Burrata

- Semi-Soft ~ e.g. Mozzarella, Jarlsberg, Swiss
- Semi-Firm ~ e.g. Cotswold, Derby, Tronchon
- Semi-Hard ~ e.g. Colby, Provolone, Halloumi
- Blue-Veined ~ e.g. Gorgonzola, Roquefort, Stilton

Cheese is so versatile. It can be used in cooking, on a charcuterie board, or for ordinary snacking. A cheese toastie can be one of the most amazing easy cheese foods to make! Always make sure to get quality cheese. None of this 'slices' that have about 5% actual cheese *shudders*. Good cheese doesn't have to be expensive, either, but it isn't the cheapest. But good cheese can last quite a while, especially the harder cheeses, which are better suited to cooking.
