Oh, how I love cherries. I wish I could swim in an ocean of cherries and have cherries everywhere! I found my little minion, Cerise, in a cherry tree while out picking cherries. We've been friends ever since that day. She is quite helpful in the orchard as well as in the kitchen. Although, I do have to work pretty hard to keep her from eating all the cherry freezer jam I make. Cerise says it is by far my best cherry recipe.
Since you are here, I must assume she told you that you could purchase some cherry jam from me? Well, I'll give you one better: the recipe! Now you can make your own cherry freezer jam whenever you want! If you ever feel the need to feast on a variety of cherry treats, though, feel free to come on back at the time of cherry harvest for our annual cherry festival.
Vanilla Cherry Freezer Jam
Ingredients
2 cups Prepared fruit (about 2 pounds ripe cherries)
2 Tbsp Lemon juice
1 Tbsp Vanilla bean paste (more if you like the flavor)
4 1/4 cups Sugar
3/4 cup Water
1 box Sure-Jell Fruit Pectin
Directions
1. Clean 5 pint sized glass jars with their lids in boiling water and dry completely.
2. Pit cherries and chop or grind the fruit to the consistency you would like in the jam. Measure 2 cups of the fruit into a bowl, add lemon juice and mix.
3. Add sugar to the cherry and lemon mixture and stir until combined. Let this mixture sit for 10 minutes, stirring a few more times as it sits.
4. Pour water into a small saucepan and add pectin, stir to combine. Bring this mixture to a boil for one minute, stirring constantly. After one minute, remove from heat and add this mixture to the cherry mixture. Stir until combined, about 5 minutes.
5. Fill your jars with the hot jam, stopping about 1/2 inch from the top. Clean the rim and place the lids on tightly. Allow these to stand at room temperature for 12-24 hours before placing them in the freezer.
Enjoy your new cherry freezer jam! You can store the jam for several weeks in your refrigerator or a little over a year in your freezer. This jam will have the benefit of fiber and micro-nutrients that are lost in the jelly making process (jam and jelly are not the same thing!). The biggest benefit to freezer jam is that it tastes exactly like a fresh cherry plucked from the tree with every bite.
