Soup

Soup is one of the oldest and most widely used ways to prepare food. It is thought that soup began around 20,000 BCE when clay pots were becoming more popular. It's speculated that it was the Neanderthals who boiled bones for the nutrients and essential fats in their diet. Soup has been found in archaeology from the Giza plateau in Egypt to Shaanxi province in China. The oldest soup was from 6000BC and the meat was hippopotamus! Soups can be clear or thick/cloudy, hot or cold, sweet or savoury. It can be whatever you need it to be.

Good soup is one of the prime ingredients of good living. For soup can do more to lift the spirits and stimulate the appetite than any other one dish.

Chorba Frik - Algeria, Libya and Tunisia
A comforting soup, with a tomato base and frik/freekeh, meat, chickpeas and warm spices. Please note that frik can be substituted with whole grains like barley, couscous or quinoa.

Chupe de Camarones - Peru
A spicy shrimp soup or chowder with chunky fresh local vegetables, spices, and some heavy cream and butter.

Gumbo - USA
Gumbo is a spicy, rich soup whose origins are in Cajun New Orleans. Influenced by West African, Native Choctaw and French cuisine, there's a huge variety of recipes available with different meats and histories.

Harira - Morocco
A hearty chickpea, lentil and tomato stew, with cinnamon, ginger and turmeric. It can be vegetarian or made with chunks of tender lamb.
