I bet you're thinking, "Wow, a mouse that loves cheese, how very original.." Well, the fact is that is exactly the case. I'm no mere mouse though. I am Fontina Brie! My owner says it's a "Southern thing" to use your middle name like I do.. Whatever that is supposed to mean! Anyway, I eat, sleep, and breathe all things cheese. I am truly sorry for people that are lactose intolerant, but there are some great vegan cheeses out there! I partake in a good vegan Muenster now and then. My favorite cheese has to be Cheddar, though. I know it's yet another cliché, but I like what I like! Cheddar is a good versatile cheese, and I feel like it's a great starter for a beginner cheese enthusiast.

That's about the time the first sheep were domesticated. People had to figure out what to do with the excess milk by product, therefore cheese was born. Cut the curd
Process the curd
Drain the whey
Salt the cheese
Shape the cheese
Ripen the cheese
Then, and only then are we blessed with the beautiful thing that is cheese.
