I'm Paula, better known as Buttered, a famous Southern cook. I got my nickname because I, like most Southern chefs, use boatloads of butter and fat in my cooking. Seriously, what's the point in making food if everything is 100% healthy and tasteless? Don't get me wrong, child, healthy food is what everyone should be eating. But I'm drawing a line when people start eating grass and sticks! Not when a big bowl of leafy green collards would do the trick. But, my land, don't forget the bacon grease for that extra oomph!
Truthfully, Southern cooks get a bad rap most of the time. Everything we make isn't extremely bad for you. French chefs use a lot of butter and decadent ingredients, but they're not scrutinized like we are! We can do light cooking, but are most valued dishes are the ones that you eat on a rare occasions, honey. You don't eat a plate piled high with fried chicken, deep fried macaroni and cheese, biscuits, twinkie pie, and a jug of mouth locking sweet tea for every meal! We'd all be dead or have clogged arteries if that was our daily menu!
Moderation is obviously the key to everything, and I swear you'll be happier at the end of the day if you eat at least a couple of things that you really want. With that, I'll still eat my bread pudding made with doughnuts for desert, or eat enough boiled peanuts to fill a gallon sack. I'll have my fried peanut butter and banana sandwiches a la The King, and you know what? I'll be happy!
